Index-Design Features Avling Kitchen & Brewery as an Inclusive and Light-Filled Microbrewery

Avling Kitchen & Brewery was featured in Index-Design in the article “Microbrasserie torontoise inclusive et lumineuse par LAMAS.” The piece highlights the Toronto project as an award-winning hospitality space located in the Leslieville neighbourhood, developed within a former mid-century grocery store building.

The article focuses on the transformation of the existing structure into a multi-program brewery, restaurant, and production space, emphasizing the introduction of daylight, openness, and accessibility as central design drivers. It describes how the renovation reorganizes the interior into distinct zones of activity while maintaining a legible and cohesive spatial experience across brewing, dining, and food production functions.

Discussing the renovation, James Macgillivray notes:

“It was necessary to reinforce the foundations and add twice as much steel to the building. This was done by integrating it into the overall design of the building. Then, quite obviously, we painted the steel pink to soften this masculine element.”

The project is framed through its emphasis on inclusivity and environmental integration, with design strategies that include increased façade openings, a skylight system, and a rooftop garden that supports on-site cultivation.
